This past week, I went to the most magical place on earth! No, it wasn’t Disney World. There were no princesses (with the exception of me); there were no Mickey’s or Minnie’s of any kind; and there were no castles or fireworks either!

There were only aisles and aisles of greatness; walls and walls of goodness; and shelves and shelves of geniousness. That’s a word, right?

I’ve been to this magical place once before, but twelve years had passed since that glorious day. Now, I question why I had waited so long.  Why did I deprive myself of this place which can only be described as heaven on earth?

I went to Costco!!!  (Oh, happy day… oh, happy day… when Jesus washed… yes, when he washed…)  Ahem.  Nevermind!

During a spur-of-the-moment drop-by with a friend who had a membership (I’m sooooo getting one of those!), I quickly learned how unprepared I was. I had no bags, and no ride to my door – I was taking the transit. Lastly, I was wearing my new black leather shoes which kill my feet, but they were expensive and I love them so I wear them anyway. #fashionwhore

Resisting the urge to buy everything in sight, I compromised by promising myself that I would return and bought only a few items that I could carry with me on the subway. One of those items was a two kilogram bag of peanut M&Ms. john.e loves them, and even though he does not eat sugar during the week, and is constantly complaining about his weight, I knew they would bring him happiness on the weekend.

Come Sunday though, there was the temptation to bake. And I couldn’t stop thinking about the candy coated devils.  I found a recipe online for M&M cookies, but I wanted something more… Something impressive, bigger, and delicious. I read the recipe and came up with this one. I added the chocolate chips and the toffee bits. I made a few changes to the sugar amounts too. I don’t like an overly sweet cookie, so I cut back the granulated sugar by half a cup.

This was actually a very simple cookie to make. I loved the idea of piling all of the cookie dough into the skillet rather than portioning out little mounds onto cookie sheets. There wasn’t as many dishes to wash up also!

Now, I would suggest you serve a slice of this with ice cream, but like I said, john.e is watching his sugar intake so our place was void of the evilness that is double-churned vanilla goodness.  But you, well you can live it up!  I insist!!  (Someone has too.)

M&M Chocolate Chip Skillet Cookie

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup butter
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips
  • ½ cup toffee bits
  • 1 cup peanut M&Ms (plus more for top)
  1. In mixing bowl, cream the butter, granulated sugar and brown sugar very well.
  2. Add the egg and vanilla; using a whisk, cream everything together until the mixture is light and fluffy.
  3. In a second bowl, sift together the flour, salt, and baking soda.
  4. Mix the dry ingredients into the wet mixture.
  5. Once fully incorporated, add the chocolate chips, toffee bits, and the M&Ms. Mix well.
  6. Transfer the mixture to a well greased 10" skillet and bake for 45 minutes at 350 degrees.
  7. Let set for 10 minutes before slicing.

    1. Trust me, I’m killing myself too! I made these and then I had to package them up and freeze them so that they were not easily accessible. I’ll take a few out of the freezer on Friday because I allow myself to be “bad” on the weekends. 🙂

  2. Wow, this looks awesome! I’ve been working on a recipe for a double-cacao skillet cookie which is damn near impossible to photograph! My partner remarked that it’s a shame I couldn’t use smarties (because I’m vegan), and then you posted this!!

          1. I honestly don’t miss anything I have stopped eating through veganism. It must be the courage of my convictions because when I have dieted to lose weight I have been constantly craving all kinds of fattening foods. I just don’t care about milk chocolate or cheese anymore, even though I was a cheese-oholic!

  3. Giant cookies are the only food I need in life. I don’t think I could wait the 10 minutes after it comes out to the oven to eat it. And despite the fact that the 100 pound cookie probably weighs more than I do, I would certainly eat the whole thing! Looks like a fantastic recipe!

I never get tired of checking out recipes, and cooking, trying everything that sounds delicious, healthy and easy, preferably. I work as a Courtroom Clerk, so during a lengthy trial, I am able to enjoy your blog! You seem to really be passionate about good food, cooking and making people happy.

But, blogging and interacting with people like you allows satisfy that itch. Cooking has always been a part of my life; I grew up in an environment where food and family were one in the same. My happiest childhood memories are all of us kids and my parents sitting around the dinner table telling tales about our day and eating my mom’s home-cooked goodness. I’m glad you found my blog too, Jann. I’ll do my best to keep you entertained during those pesky trials. 🙂

  7. Byron, I just made this skillet cookie this morning and I have a couple of questions. The dough was very crumbly so I added another egg. Was it supposed to be crumbly? Also, my cookie took over an hour to cook and was much more brown than your picture. Just wondering what could be different between mine and yours other than the egg. Oh, it did taste delicious even though it was quite brown.

    1. Hi Laura, I’m glad the cookie was still delicious even though the colour was off. I never really trust the colour of food online any way, because it seems that there’s too much of a risk that the colour settings on one computer screen are very different from those on another. I tend to follow the recipe exactly and hope for the best. In terms of the dough, I wouldn’t describe it as crumbly. It shouldn’t be sticky either, but not crumbly – somewhere in the middle. Adding the extra egg might account for the darker colour, but it wouldn’t ruin the cookie, just make it a little more dense. The dough should be that you will need to press it into the skillet lightly to form a solid cookie shape. I hope that helps. Let me know if you have any further questions. Thanks for dropping by! 🙂
